After boiling the peeled and cubed potatoes until soft, you’ll add the cream cheese and combine with a potato masher. In a saucepan over medium heat, mix the butter and milk until well-combined. Then, pour the mixture over the potatoes and stir. Season with salt, pepper, and chives as desired.

Cheesy Brussels Sprouts Bake

Looking for a delicious way to add veggies to the table? This cheesy Brussels sprouts bake is the perfect solution. You’ll begin by cooking five slices of bacon over medium heat in an oven-safe skillet until crispy. Drain onto a paper towel, then chop and set aside. Melt butter in the same skillet over medium heat, and cook seasoned shallots and Brussels sprouts until tender. Remove the pan from heat and drizzle with heavy cream, then add the cheeses and bacon. Finally, pop the skillet into the oven at 375 degrees Fahrenheit and bake until the cheese is golden and bubbly.

Lemon-Maple Squash

This lemon-maple squash recipe is simple yet satisfying. You’ll need four pounds of seeded butternut squash sliced into thick wedges, then place them cut-side up in a baking dish. Next, create a glaze with ⅓ cup of maple syrup, ⅓ cup water, the juice and zest of one lemon, ½ teaspoon red pepper flakes, and salt and pepper to taste. Pour the mixture over the squash and add four dollops of butter. Bake at 350 degrees Fahrenheit for 20 minutes and flip the squash. Allow to bake for another 25 minutes, basting halfway through. 

Cheesy Mushroom and Broccoli Casserole

Casseroles are a quick and easy side dish option that most guests enjoy. This savory cheesy mushroom and broccoli casserole is packed with veggies and a generous serving of cheddar and Monterey cheeses. First, butter the casserole dish and melt three tablespoons of butter in a large pot. Add flour to make a roux, then add in mushrooms, onion, garlic, garlic powder, cayenne pepper, heavy cream, and chicken stock. Next, pour in the broccoli and rice and season with salt and pepper. Pour the mixture into the baking dish and cover with cheese, then bake at 425 degrees Fahrenheit until the cheese is golden (about 20 minutes).
